Blackened Chicken

Ingredients

  • Blackening Powder - 2 tsp Paprika 2 tsp Ground Cumin 2 tsp Mustard Powder 1 tsp Dried Thyme 1 tsp Dried Oregano 1 tsp Cayenne Pepper
  • Marinade - 2tbsp Natural Yogurt 1tsp Lemon Juice 1 clove of Grated Garlic 2-3 tsp Blackening Powder Mix
  • 3 or 4 chicken breasts

Directions

  1.  

    Prepare the blackening powder mix - this can be done in advance and stored in a jar until used (the quantities shown will give you enough for 3 or 4 meals) 

    Take 3 or 4 chicken breasts and cut into thin strips, wash and remove excess water with kitchen paper then marinate for about an hour

    Cook on the BBQ or under the grill.
