Courgette Cake

Ingredients

  • 7oz Plain Flour
  • 7oz Wholemeal Plain Flour
  • 7 oz Caster Sugar
  • 8 oz Dried Fruit
  • 6 oz Chopped Walnuts
  • 2 tsp Bicarbonate of Soda
  • 1 tsp Baking Powder
  • 13 oz Grated Courgettes
  • 285 ml Sunflower Oil
  • 3 Eggs

Directions

  1. Pre-heat oven to 180 degrees Centigrade 

  2. Line 2 loaf tins or similar

  3. Place all ingredients in a large bowl and mix well.

  4. Pour into the lined tins

  5. Bake in oven for about 1 hour

  6. When cold you can ice cake with a mix of lemon juice, icing sugar and cream cheese if you wish.

    Allow 125 gm of cream cheese per cake.
