Courgette Soup
Ingredients
- 500g Yellow Courgettes - sliced
- 250g washed potatoes - chopped into cm cubes
- 1 medium onion - chopped small
- 50g strong cheddar cheese - grated + a little to serve
- Grated nutmeg to serve
- Cream to serve
- Vegetable stock cube dissolved in hot water
Directions
Boil potatoes for 5 minutes in the vegetable stock
Add courgette & onion and cook for a further 5 minutes
Liquidise
Add grated cheese
Serve sprinkled with grated cheese and nutmeg & a swirl of cream.
