Grandma's Ratatouille

Ingredients

  • 8 Mushrooms
  • 2 onions - 1 red & 1 white
  • 1/2 Red Pepper or mix of Yellow & Red
  • 1 cougette
  • 1 tsp of Basil
  • 1 tbsp of Balsamic Viinegar
  • 2 Garlic Cloves grated
  • 2 tins of Chopped Tomatoes
  • Olive Oil

Directions

  1. Prepare the vegetables

    • Chop the mushrooms into quarters or smaller depending on size
    • Slice the onions
    • Slice the Courgette
    • Cut the peppers into chunks of about 1/2 inch/1 cm

     

    NB. At this point my 11 year old Granddaughter took over the cooking which shows how easy it is

  2. In a wok, fry the Mushrooms then set aside. Do the same with the Peppers & Courgettes. Fry the onions and return the fried vegetables back to the wok and then add the Grated Garlic.

  3. Add the 2 tins of Chopped Tomatoes, Basil & Balsamic Vinegar.

  4. Allow to simmer for 15/20 minutes.

  5. Add Cooked Chicken if desired and ensure heated throughly before serving

  6. Add freshly ground black pepper to taste and serve with pasta.
