Prepare the vegetables

Chop the mushrooms into quarters or smaller depending on size

Slice the onions

Slice the Courgette
-
Cut the peppers into chunks of about 1/2 inch/1 cm
NB. At this point my 11 year old Granddaughter took over the cooking which shows how easy it is
In a wok, fry the Mushrooms then set aside. Do the same with the Peppers & Courgettes. Fry the onions and return the fried vegetables back to the wok and then add the Grated Garlic.
Add the 2 tins of Chopped Tomatoes, Basil & Balsamic Vinegar.
Allow to simmer for 15/20 minutes.
Add Cooked Chicken if desired and ensure heated throughly before serving
Add freshly ground black pepper to taste and serve with pasta.
