The tops of the two bedside cabinets, in my 2006 Heritage 640-ES, have small holes in the centre where something has dropped on them.
Would it be possible to either re-cover or purchase replacements?

You have a few options on your cabinet tops. If the hole is small enough you can obtain a standard worktop repair kit available from a DIY shop such as B&Q or Homebase. Many colours are available and I believe you can mix up colours to get a closer match.
Or for a replacement top, which I think would come as a sheet and you would need to cut/trim to size and finish off, try O 'Leary Motorhomes who cleared the factory after Fleetwood stopped production, they advertise on our Home page and are also listed under Links.
You may find a match in a high street kitchen studio as most laminates and worktops would have been supplied by Duropal. You can use the link below to find a distributor who can point you toward suppliers near to you.
