I have recently purchased a 1999 Colchester 500-EB. It doesn’t seem to have the bunk beds attachments.
Do you know where I could purchase the kit?

I think the bunks would have been Pullman bunks and been fitted over the dinette. Many owners remove them to save weight if they aren't using them.
Depending on whether you want new or used, you could try any caravan dealer or a breaker, there are a few listed on the website.
